Crab-Stuffed Potatoes

My roommate Rick made this for me and my Alexandria, Va. roommates, just before we closed the group house. Rick was something of a frustrated gourmet, but this came out well.

Four baking potatoes
1/4 cup brandy or sherry
1 clove garlic, minced
1/4 cup milk
1/2 cup Parmesan cheese
1 cup Mozzarella cheese
1/2 cup cottage cheese
1/2 lb. crab meat
Sliced green onion to taste
Bake, do not microwave potatoes until done. Combine brandy and garlic in a small saucepan and bring to a boil. Stir in milk, parmesan cheese, mustard and paprika. Cut baked potatoes in half lengthwise and scoop out centers. Mash the potatoes with the brandy sauce. Add cottage cheese and crab meat, green onion and half of mozzarella. Mix lightly. Fill in shells with the mixture. Top with remaining mozzarella cheese. Bake for 25 minutes at 325° F. Makes 8 halves.
