This recipe of Jon's was the only one submitted electronically - from his computer directly to mine. A friend of his, Emily Barrett, gave him the recipe after fixing the dish for him.
- 1 box lasagna noodles
- 1-1/2 jars spaghetti sauce
- 2 lbs. cottage cheese
- 2 pkg. shredded mozzarella cheese
- pinch of parsley flakes to taste
- small container of Parmesan cheese
- 2 large or 3 smaller eggs
- 13" x 9" x 2" pan
Boil Noodles 'til almost cooked. Rinse in cool water and lay out (flat) to dry while preparing other stuff.
Preheat oven to 375°.
Prepare cottage cheese mixture using all cottage cheese, and half of the Parmesan cheese, the parsley flakes, and all eggs.
Layer the ingredients as follows: Lay a layer of noodles on bottom of pan. Spread half the cottage cheese mixture evenly over noodles, and on sprinkle on this half the grated mozzarella cheese. Layer half of the spaghetti sauce on evenly.
Repeat layering process once. then sprinkle rest of Parmesan cheese on top.
Bake at 350° to 375°F for 30 to 35 min.
Let cool five minutes.
Eat and enjoy. . . serves five extremely starving people (I know this!) or eight normal appetites.
