Peanut Butter Cake

Best if used with cream cheese frosting, below.

  • 1/2 cup shortening
  • 1/2 cup peanut butter
  • 1-1/2 cups brown sugar
  • 2 eggs, beaten
  • 1 tsp. vanilla extract
  • 2/3 cup milk
  • 1-1/2 cups cake flour
  • 1/2 tsp.salt
  • 2 tsp.baking powder

Cream the shortening, peanut butter and sugar. Add eggs and vanilla, beat well. Add milk. Sift dry ingredients and add, beating thoroughly after each addition. Line an 8-oz. pan with waxed paper and pour in batter. Bake at 350° for 50 minutes.

CREAM CHEESE FROSTING:

  • one 3-oz. package cream cheese
  • 2-1/2 cups confectioners sugar
  • 1 tsp.vanilla
  • 1/4 cup half-and-half

Cream cheese and sugar together in a bowl. Add vanilla and half-and-half. Beat until creamy.
